2/20/14: The temps have been good lately. We have collected over 400 gallons of sap so far. Let's hope for some cold nights and cool days to keep the sap flowing.
2015 Update: The weather has not played nice so far. The trees are still very frozen and it will take a couple days for them to thaw out. We are hoping for a gradual warm up but I think Mother Nature has other plans. While we have made one batch of syrup already it is not nearly enough to fill the demand we have. Let's hope for some cold night and mild days but not mild. We want the sap to flow, not the trees to bud. At least not for a couple weeks.
We have added some new items this year. Mostly we have expanded the Sugar Shack to accommodate the new evaporator. We also have a cold box now to hold the sap to process larger amounts at a quicker rate. We have tapped an additional 50-60 trees this year as well as adding a vacuum pump on some lines. Now to just get the temps to cooperate.

2016 Update: We have installed new main lines and tried to get most trees on the main line. We have a new system for collecting the sap and have tapped many more trees. We still have some on bags but most are on tubing. The snow we had recently made us thankful for not having to hike through the woods in 44" of snow to collect sap bags. Our new evaporator is working well and we have added a new finishing system to make for easier bottling. The sap has been running good but could use about 4 more weeks of sap weather for a really good season.
2017-2018 Update: The weather has been crazy this year. Not the best for collecting sap but we hung in there and ended up having a pretty decent year. Had a few lines come down with the wind storms but damage was minimal. Looking to add some more lines for next year and change a bit of our pumping to more of a vacuum system. For now, the trees are healing over and getting ready for spring. We are spending our time cleaning up from the season, flushing lines, cleaning the evaporator and packing up until next year.
